Ingredients:

  • 8 lamb chops (about 1-inch thick)

  • 2 tbsp olive oil

  • Salt & black pepper, to taste

  • 6-7 garlic cloves

  • 3 tbsp cowboy butter (plus more for serving)

  • Fresh parsley

  • lemon zest

  • crushed red pepper flakes



  • 2. Roasted Rack of Lamb with Cowboy Butter
    Ingredients:
  • 1 rack of lamb (8 ribs, frenched)

  • 2 tbsp olive oil

  • Salt & pepper to taste

  • Cayenne pepper

  • ¼ cup cowboy butter (softened)

  • 2 tbsp breadcrumbs (optional, for crust)


  • 3. Slow-Roasted Leg of Lamb with Cowboy Butter Marinade
    Ingredients:
  • 1 whole leg of lamb (5–6 lbs, bone-in or boneless)

  • ½ cup cowboy butter (softened, for marinade)

  • 2 tbsp olive oil

  • 2 tbsp rosemary, chopped

  • 2 tbsp dried thyme, or fresh thyme

  • 1 lemon, sliced

Instructions:

  1. Season: Pat lamb chops dry, season generously with salt & pepper.
  2. Sear: Heat olive oil in a heavy skillet (cast iron works best) over medium-high heat.
  3. Cook lamb chops 2–3 minutes per side for medium-rare (adjust for preferred doneness).
  4. Finish: During the last 30 seconds, add 2–3 tbsp of cowboy butter to the pan. Spoon melted butter over the chops for flavor.
  5. Rest & Serve: Remove from pan, rest 5 minutes. Serve with extra butter dolloped on top.
